The New SKUs

Coast to Coast Kitchen is deepening its Target footprint with three new frozen appetizers: a Lobster Empanada and Sweet Chili Shrimp Empanada developed exclusively for the retailer, plus a Crab Rangoon. All three items are now available in Target stores nationwide, including Alaska and Hawaii, building on the brand's seafood appetizer debut at the mass retailer in February 2026.

Empanadas are the product that originally put Coast to Coast Kitchen on the map and remain its flagship format. The Lobster Empanada draws on founder and CEO Emma Hernan's Massachusetts upbringing, while the Sweet Chili Shrimp reflects her time living in California — a coastal contrast that gives the brand its name. The Crab Rangoon was inspired by Hernan's grandfather, a chef known for preparing crab and lobster dishes at family gatherings. The new items join an existing lineup at Target that includes New England Crab Cakes, Bacon Scallops, Shrimp Spring Rolls, and Crab Minis.

Category Performance

The numbers from Coast to Coast Kitchen's initial Target launch underscore the brand's traction with a key demographic. Since February 2026, the brand has generated millions of dollars in sales and brought nearly 100,000 new shoppers into the seafood appetizer category. Millennials accounted for 80% of those new customers, and 40% of new-to-category transactions included three or more units — a basket-building signal that retailers and frozen-food suppliers alike will find noteworthy.

For foodservice and retail operators tracking frozen seafood trends, that millennial skew is significant. The segment has long struggled to attract younger consumers who often perceive frozen seafood as low-quality or uninspired. Coast to Coast Kitchen's fusion-forward formats — empanadas, spring rolls, rangoon — reframe the category through familiar global flavors rather than commodity positioning.

Brand Infrastructure

Hernan is a third-generation food manufacturing entrepreneur. She owns two production facilities outside Boston: the company's original facility valued at $5.5 million and a second plant valued at $7.5 million. Combined, those operations employ more than 100 people, the majority of them women. That vertically integrated manufacturing model gives the brand direct control over quality and scaling — a structural advantage as retail distribution expands.
