A new digital toolkit designed to help chefs, foodservice operators, and healthcare professionals put fermented foods on more menus and meal plans is now available for free download. The Fermented Foods Toolkit: Translating Emerging Science into Delicious, Everyday Eating was produced by The Center for Food and Beverage Leadership at The Culinary Institute of America with nutrition science expertise from Danone USA, and received scientific review from researchers affiliated with Stanford Medicine's Nutrition Studies Research Group.

What's Inside

The resource is built around three practical layers. Visual learning tools debunk common myths—clarifying, for instance, why pickled foods are not automatically fermented—and distinguish prebiotics from probiotics in plain language. A recipe and pairing section offers flavor-forward applications for yogurt, kimchi, sauerkraut, and miso across dressings, sauces, and grain bowls, the kind of approachable formats that translate directly to institutional and restaurant menus. A third layer addresses cultural breadth, providing a global survey of fermented food traditions and strategies for tailoring recommendations to different budgets and dietary needs—a critical consideration for foodservice operators serving diverse communities.

Kristen Rasmussen, MS, RDN, Program Director for Food is Life, Food is Health and Assistant Director of Health & Sustainability Programs at the Culinary Institute of America, said the resource responded directly to what professionals told developers they needed. "They asked for clear evidence summaries, approachable recipes, flexible meal ideas, and visual tools that can work during a patient visit, in a teaching kitchen, or in foodservice," Rasmussen said. "Those needs directly informed the resource so professionals can move more confidently from discussing the science to applying it."

The Chronic Disease Connection

The toolkit also addresses the evidence linking yogurt consumption to reduced type 2 diabetes risk—including the U.S. Food and Drug Administration's first qualified health claim for yogurt, which followed a petition by Danone USA. For foodservice and healthcare operators navigating growing consumer interest in functional foods and preventive nutrition, pairing that claim with practical culinary guidance creates a direct path from clinical recommendation to plate.

Amanda Blechman, RD, Director of Nutrition and Scientific Affairs at Danone USA, framed the toolkit as a bridge between research and real-world application. "This resource represents an important step in our two-year Food is Life, Food is Health commitment," she said. "By supporting science-based tools that can be used in clinics, kitchens, and communities, we hope to make evidence-based nutrition more accessible for the people and communities these professionals serve."

Broader Industry Context

Fermented foods have moved well beyond a niche trend. Consumer interest in gut health, the microbiome, and functional eating continues to shape menu development and foodservice purchasing decisions across segments. Yet operators and clinical staff often lack structured frameworks for communicating the science behind those products or building cohesive menu narratives around them. The toolkit attempts to close that gap at both the culinary and institutional levels.

The resource is part of Danone's two-year commitment as a Founding Exhibitor at the Food is Life, Food is Health Summit—a collaboration between the Culinary Institute of America and Stanford Medicine launched in May 2026—and fits a wider industry pattern of food and beverage companies investing in professional education as a channel for driving ingredient adoption. Our colleagues at Food & Beverage Magazine have tracked similar science-to-shelf education initiatives across the functional food and beverage industry analysis space. The toolkit is available now at foodislifefoodishealth.org.
