The Deal

Chubby Group, the Los Angeles-based operator behind Chubby Cattle, Wagyu House, The X Pot, NIKU X, Chubby Skewers, and Chubby Bowls, has closed a $50 million Series A led by Prysm Capital at a $500 million valuation — and simultaneously signed a letter of intent to acquire all 47 U.S. restaurants and four development sites from GEN Restaurant Group (Nasdaq: GENK) in a transaction valued at up to $100 million. Together, the moves position Chubby as one of the largest Asian dining groups in the country.

The acquisition consideration includes a note convertible into Chubby Group equity at a $1.5 billion valuation, and Chubby will receive a perpetual license to the GEN brand. Closing remains subject to definitive agreements, license and lease transfers, and regulatory approvals. Chubby plans to take over the 47 locations in four phases over 12 months, with the first 12 sites targeted for November 1, 2026.

The Conversion Playbook

Chubby intends to migrate the GEN portfolio onto its own supply chain and Chubby Club membership ecosystem, relaunching each location either as GEN X — a wagyu-forward evolution of the Korean BBQ format guests already know — or as one of its existing Chubby concepts. The company says it will fund conversions from its own capital, and it has a proof of concept to point to: former GEN sites Chubby has already converted saw unit revenue grow up to 6x after adopting the group's supply chain, redesigned interiors, and hospitality standards.

That supply chain is a core competitive lever. Rather than sourcing cuts from broadline distributors, Chubby buys whole cattle and whole chickens and runs direct seafood programs, processing and distributing everything in-house. Using the whole animal across its 25-plus concepts allows the group to serve wagyu omakase and fast-casual tallow-cooked bowls from the same sourcing program — a model that supports both margin discipline and menu differentiation. For operators tracking vertical integration trends in restaurant supply chains, Chubby's approach offers a working case study at meaningful scale.

Growth Trajectory

Chubby Group opened its first restaurant in 2016 and has since grown to more than 70 locations, with plans to reach roughly 100 by year-end. Systemwide revenue climbed from $1.5 million in 2016 to $233 million in 2025, with $400 million projected for full-year 2026. The company serves approximately 450,000 Chubby Club members. Until this round, growth was funded entirely through operating cash flow, founders, local operating partners, supply chain partners, and family offices — more than $90 million deployed without institutional capital.

The Series A proceeds will accelerate Chubby's supply chain infrastructure and support 30 new locations planned across its Mr. Chubby and Chubby Bowls formats in 2027. "We've watched Chubby Group grow from 20 to 70 locations while staying profitable," said Matt Roberts, co-founder and partner at Prysm Capital. "They own everything from the supply chain to the in-house design to the loyalty program."

The timing aligns with a favorable macro backdrop for the segment. Outside Asia-Pacific, sales at Asian full- and limited-service restaurants grew at an 11% compound annual rate from 2020 to 2025, versus 7% for the restaurant market overall, according to Euromonitor International. That gap has drawn growing investor and operator attention to Asian foodservice concepts, particularly those with differentiated formats and proprietary sourcing. Chubby Group's scale play, backed by institutional capital for the first time, signals that consolidation in the segment may be accelerating.
