The Return
Chipotle Mexican Grill is bringing back its Smoked Brisket to restaurants across the U.S. and Canada on November 5, timing the limited-time protein's return to peak football season. The item has a track record of selling out ahead of schedule, giving operators a narrow window to capitalize on renewed demand.
The brisket is seasoned with a blend of smoked serrano and chipotle chili peppers before being smoked low-and-slow over mesquite wood off-site. Once it arrives at individual locations, crew members sear it on the plancha, finish it with additional spices, coat it in a smoky chili pepper sauce and hand-chop it in small batches throughout the day — a multi-step prep sequence that distinguishes it from Chipotle's everyday protein lineup.
Sourcing Standards
The chain estimates that only about 5% of U.S. beef meets its Responsibly Raised® criteria, which require a strictly vegetarian diet, no added growth hormones, no routine antibiotics and traceability back to the ranch of origin. That tight supply ceiling is one reason the SKU tends to exit menus faster than planned — and why operators should expect heavy guest interest in the early days of availability.
"Our Smoked Brisket is defined by the classic culinary techniques that go into every batch," said Nevielle Panthaky, Senior Vice President of Culinary at Chipotle. "A signature blend of spices and a low-and-slow smoking process give the brisket its bold, beefy, smoky character, while the plancha sear and savory-tangy sauce create a tender bite with a little kick that's uniquely Chipotle."
For operators tracking menu performance by nutritional positioning, the brand's recommended game-day build — a burrito bowl with white rice, pinto beans, Smoked Brisket, fresh tomato salsa, light tomatillo-red chili salsa, cheese and Queso Blanco — clocks in at 45 grams of protein and 11 grams of fiber. That kind of macro profile resonates with the growing consumer appetite for high-protein fast-casual options that has reshaped LTO strategy across the segment.
Delivery and Marketing Angle
To drive digital order volume, Chipotle is waiving delivery fees on all Smoked Brisket orders placed through the Chipotle app, Chipotle.com or Chipotle.ca from November 5 through November 18. The promotion applies only to direct channels — not third-party delivery platforms — a deliberate move to funnel traffic toward first-party data and the Chipotle Rewards loyalty ecosystem. Standard delivery price markups still apply, as do service and other checkout fees (with exceptions in California, Colorado, Connecticut, Massachusetts, Minnesota and Virginia).
On the marketing side, Chipotle is extending its creator-driven "100 Creators" campaign — which launched in August — by inviting superfans and food content creators, including Max Greb (Max the Meat Guy) and Newton Nguyen (Newt), into restaurant kitchens to document the brisket preparation firsthand. The creative was developed with agency partner KIDS. The approach leans into earned social amplification rather than traditional broadcast spend, a playbook increasingly common among major quick-service and fast-casual brands investing in influencer-led campaigns.
With over 4,200 locations across the U.S., Canada and Europe as of mid-2026, Chipotle's ability to execute a high-complexity LTO at scale remains one of its key competitive differentiators. Industry observers tracking fast-casual menu innovation and limited-time offer strategy will be watching closely to see whether the brisket's sell-out history repeats — and how quickly the chain can extend or sunset the run based on supply.
