For the first time in its history, Chipotle Mexican Grill is launching two limited-time menu items on the same day. Pollo Asado—back with a fully reformulated recipe—and new Chili Lime Chips hit U.S. and Canada restaurants August 31, with Chipotle Rewards members getting a four-day head start on the chips before they open to all guests on September 4.

The Menu Additions

The returning Pollo Asado features freshly grilled adobo chicken seasoned with garlic and Mexican spices, then finished with hand-cut cilantro and real lime. Nevielle Panthaky, Senior Vice President of Culinary at Chipotle, notes the citrus finish was designed to cut through the chicken's smoky notes while complementing the new chip offering. The Chili Lime Chips, meanwhile, grew directly out of consumer behavior: since 2022, social mentions of seasoned chips paired with Chipotle entrées have surged more than 1,500%, and related TikTok and Instagram content has generated approximately 96 million engagements. Rather than cede that territory to packaged snack brands, Chipotle developed an in-house version made with real ingredients and no artificial colors, flavors, or preservatives.

For operators and restaurant industry analysts tracking LTO strategy, the dual launch is notable for what it signals about how large chains are using loyalty programs as a staged rollout tool. The early-access window for Rewards members—chips available digitally through the Chipotle app and Chipotle.com before in-restaurant availability—creates a concrete incentive to engage with the brand's owned digital channels rather than third-party platforms. To further drive digital orders, the chain is waiving delivery fees on Pollo Asado orders placed through its own app and website from August 31 through September 13.

Marketing Strategy

"Pollo Asado delivered strong results in testing, giving us clear evidence that guests were excited about the new recipe," said Fernando Machado, Chief Brand Officer. "Chili Lime Chips are our answer—with no artificial colors, flavors or preservatives and an ingredient list that doesn't require a chemistry degree to understand."

The campaign supporting both items is itself unconventional. Chipotle enlisted 100 creators—spanning food, art, animation, and music—and sent them into restaurant kitchens during morning prep. Each filmed the experience without traditional scripts or shot lists, and the resulting national TV spots contain no brand-shot footage. The work marks Machado's first national advertising debut since joining Chipotle, and the chain's first major collaboration with agency partner KIDS. That creator-led model aligns with broader shifts in foodservice brand marketing, where authenticity and platform-native content increasingly outperform polished brand productions for driving engagement among younger diners.

The two-item launch comes as the broader fast-casual beverage and menu innovation space grows more competitive, with major chains accelerating LTO cadence to generate traffic and social conversation. By converting a viral fan food hack into an official menu item, Chipotle is executing a strategy that simultaneously validates its guest community and formalizes a revenue stream that was previously benefiting snack brands.
