New Leadership for Fort Lauderdale Luxury Dining Caviar Club, a luxury restaurant and lounge set to open fall 2026 in Fort Lauderdale, has named Executive Chef Jeremy Loya to lead its kitchen. Loya's background spans high-profile establishments including Soho House, Desert Mountain Club, and Michelin-recognized Caldera House in Scottsdale, with earlier career stints under chef Rick Bayless in Chicago, Los Angeles, Dallas and Scottsdale. Alicia Montalvo has been appointed Corporate Pastry Chef, overseeing dessert programs across all Falsetto Hospitality concepts. Montalvo's background includes work in respected restaurant kitchens and was shaped by her upbringing in El Salvador and her grandfather's work as an artisanal cheesemaker. Lindsay Shapiro, formerly Private Client Manager at Moët Hennessy (LVMH), takes the role of Director of Membership & Experiences. She brings 15 years of experience in luxury client strategy and has managed ultra-high-net-worth relationships and orchestrated exclusive experiences for global brands.
Founding 100 Membership Opens to Select Applicants Caviar Club is launching The Founding 100, an invitation-only members club that offers guaranteed priority reservations, preferred seating, dedicated concierge service, and expedited access to the venue's dining room and lounge. Members will also gain access to exclusive partnerships with luxury brands and producers, including rare wine and spirits allocations, private tastings, and curated travel experiences. Partnerships include Dom Pérignon, Opus One, The Only Caviar, Moët & Chandon, and LVMH. While the restaurant will operate open to the public, membership unlocks what the company describes as "a distinct, elevated layer of hospitality, one defined by priority, privilege, and once-in-a-lifetime experiences." A limited number of memberships will open to public application in mid-June through the Caviar Club website, with final acceptance determined by selective review. Members will also enjoy a private calendar of invitation-only programming that includes intimate monthly events, menu previews, and off-menu tastings.
About the Concept and Operator Caviar Club will be located at 833 East Las Olas Boulevard in Fort Lauderdale.
Marc Falsetto, CEO and founder of Falsetto Hospitality (formerly Handcrafted Hospitality, launched in 2010), is overseeing the project. Falsetto has been instrumental in Fort Lauderdale's restaurant scene for decades. His current portfolio includes multiple Tacocraft locations, Pizza Craft, Apothecary speakeasy, and Anthony's Runway 84, which reopened in 2023 after a multimillion-dollar redesign following its closure. He was named one of South Florida's "Top 40 Under 40" and has been recognized as an "Ultimate CEO" and hospitality "Power Leader" five years in a row by the South Florida Business Journal.
Why It Matters
The arrival of a high-end private membership model in Fort Lauderdale signals continued market maturation and operator confidence in the region's luxury dining segment. The blended restaurant-and-club model—with public walk-in service layered beneath a tiered membership experience—represents a growing hybrid hospitality strategy seen in markets like New York and Los Angeles. For operators and investors watching South Florida's competitive landscape, Caviar Club's structure and talent acquisition underscore both the region's growth potential and the escalating talent competition in luxury fine dining.
