Catch Hospitality Group's The Corner Store will open its first West Coast outpost at The Cosmopolitan of Las Vegas on November 9, with reservations now live. The expansion brings the SoHo original — backed by restaurateur Tilman Fertitta and CHG co-founder Eugene Remm — to the Las Vegas Strip for the first time, deepening a relationship with MGM Resorts International that began when CATCH opened at ARIA Resort & Casino in 2018.

The Menu

Chef Michael Vignola, who leads the culinary program, is partnering with Las Vegas Executive Chef Daniel Bernardo on a menu built around an ingredient-first approach to elevated American classics. Signature dishes include Lobster & Caviar Rolls with tarragon-celery remoulade, a Wagyu French Dip featuring 72-hour slow-roasted Westholme Australian ribeye, Five Cheese Pizza Rolls with whipped ranch, and The Corner Store Caesar with everything bagel croutons and cream cheese croquettes. A Las Vegas-exclusive Butcher's Counter anchors the protein program, spotlighting the Rosewood Ranch Wagyu Tomahawk and Wagyu Porterhouse alongside seasonal crudos, market-driven salads, and larger shared plates designed for communal dining.

Cocktails and Design

The beverage program, developed by CHG Beverage Director Lucas Robinson alongside The Cosmopolitan's Head of Mixology Gedeon Tsegaye, centers the martini as its signature format. The menu carries over SoHo favorites — including the Tomato Martini and Sour Cream & Onion Martini — and adds Las Vegas-exclusive creations such as a version of Oli's Dirty Martini served with mascarpone caviar olives. House-made ingredients and advanced techniques including infusion, sous vide, and milk washing underpin the program. A large-format Martini Service poured for two to three guests will be a signature offering. The wine list was curated by CHG Wine Director Emily Buse, recognized by Wine Spectator as one of the top 50 sommeliers in the U.S., in collaboration with MGM Resorts Master Sommelier and Executive Director of Wine Douglas Kim.

Rockwell Group — the firm behind the original SoHo location — designed the Las Vegas space, translating the warmth of a New York neighborhood restaurant to the resort's third floor. The interior moves through a classic main bar into a Martini Room anchored by a green onyx bar, then into a main dining room inspired by vintage train cars. A private dining room accommodating up to 24 guests completes the footprint, with a flexible partition allowing the space to be divided. The restaurant will be open Sunday through Thursday from 5 p.m. to 10 p.m., and Friday and Saturday from 5 p.m. through late.

For operators tracking high-end restaurant expansion into resort hospitality and the growing influence of martini-led cocktail programs on fine-dining beverage strategy, The Corner Store's Las Vegas launch signals how independent New York concepts can scale through strategic hotel partnerships without diluting brand identity. CHG is also preparing a new concept at 9 West 57th Street in New York City for 2027.
