New Flavors Join Classics at Downtown Vegas Spot Carson Kitchen in Downtown Las Vegas is introducing more than a dozen new dishes and cocktails for the fall and winter season, pairing bold, unexpected flavor combinations with the restaurant's established menu of creative American fare. "Every menu change gives us an opportunity to play around with ideas and put something on the table that people might not expect," said Cory Harwell, chef and owner of Carson Kitchen. "The flavors should be bold, the dishes should have a point of view and there should always be something that makes you curious enough to order it. That's really what this menu is about: familiar ideas done in ways that are flavorful, unexpected and distinctly Carson Kitchen."
Standout Additions New entrées include a Pork Chop ($28) with sage white wine beurre blanc and Verlasso Salmon ($32) finished with salsa macha. The Fettuccine Foiefredo ($21) pairs fettuccine with duck confit, while vegetable-forward dishes include Kabocha Squash ($15) with maple, chipotle hummus and pepita, and Neeps & Tatties ($15), a reimagining of the Scottish potato-and-turnip combination using sweet potato, rutabaga and shallot. The flatbread selection adds Jerk Mushroom ($17) with pickled red onion and plantain crisps, and Chorizo Fundido ($19) with poblano pepper and lime crema. A returning favorite, Grilled Oysters ($15), now features a Swiss chard Rockefeller preparation. Side dishes include the Ginger Pear ($15), combining pecan, brie and ginger honey vinaigrette.
Behind the Bar Three new cocktails debut: JAN Like January ($14), combining Irish whiskey, watermelon juice, sherry and salsa macha honey; Udell'icious ($16), made with cognac, ruby port, Earl Grey syrup and lime; and panDAMN ($15), a blend of white rum, cachaça, pandan, lime and guava chai foam. New beer and wine selections have also joined the lineup. For dessert, Cherries Jubilee "Cheesecake" ($12) pairs cherry brandy with a speculoos crumble.
Hours and Location Carson Kitchen, located at 124 S 6th St, Suite 100, is open Monday–Thursday 11:30 a.m. to 10 p.m., Friday–Saturday 11:30 a.m. to 11 p.m., and Sunday 11:30 a.m. to 10 p.m.
