Bodine Berger, a franchise development veteran with stints at Domino's Pizza, Steak 'n Shake, and Eggs Up Grill, has joined Broken Yolk Cafe as Director of Franchise Development — the latest addition to a franchise sales team that has tripled in size over the past 12 months. The San Diego-based breakfast and brunch chain, now operating 42 locations, is positioning the hire as a catalyst for what it calls record-level development over the next three to five years.
Midwest Debut Approaching
The timing of Berger's appointment aligns with a pivotal moment for the brand's geographic reach. Broken Yolk Cafe has already expanded into Arizona, California, Idaho, Nevada, and Texas. Next month, the chain is set to make its Midwest debut following a multi-unit area development agreement for Lafayette, Indiana, signed earlier this year — a deal that will bring two locations to the market. Longer-term targets include Boise, Dallas, Indianapolis, Northern California, and Phoenix, all flagged by the brand as priority emerging markets with significant whitespace.
Incentives for New Franchisees
To attract experienced operators into its pipeline, Broken Yolk Cafe is offering a 2.5% royalty reduction for years one and two on all stores opened under an area development agreement signed before March 31, 2027. The limited-window incentive reflects a broader industry trend of franchise systems front-loading financial concessions to accelerate unit commitments in targeted regions — a strategy that has gained traction across the restaurant franchising landscape as development costs and borrowing rates remain elevated.
Berger's own read on the brand's growth ceiling is optimistic. "I can say from firsthand experience in the breakfast segment, Broken Yolk Cafe is primed to double in size over the next several years, as the immense whitespace that exists for the brand throughout the country continues to attract new partners wanting to explore the two-daypart model," he said. That two-daypart focus — breakfast and brunch, without dinner service — has become an increasingly attractive operating model for franchisees managing labor costs and kitchen complexity.
CEO John Gelastopoulos framed the hire as a precision play rather than a volume push. "While Bodine's addition to the team won't alter that approach, his experience is sure to accelerate our expansion into new markets and communities nationwide," he said, underscoring that the brand's quality-over-quantity philosophy in franchisee selection remains intact.
Founded in Pacific Beach in 1979, Broken Yolk Cafe has built its concept around scratch-made ingredients and large portion sizes — differentiators that have contributed to what the brand describes as a category-leading average unit volume in the breakfast and brunch segment. For operators tracking breakfast-daypart growth and franchise opportunities, the chain's trajectory and incentive structure make it a name worth watching as it moves into new regional markets.
