Chef Aron Schwartz and co-owner Pam Schwartz have expanded dinner service at Blank Slate in Encinitas, California, extending hours to Wednesday through Saturday, 5:30 to 9 p.m. The move comes as the husband-and-wife operation, open near Moonlight Beach on North Coast Highway 101, has drawn strong early reviews and growing reservation demand since opening.
The Operators Behind It
Both Schwartzes trained at the Culinary Institute of America and bring complementary, deep-bench hospitality experience to the venture. Aron's résumé spans L'Auberge Del Mar, Lutèce in Las Vegas, and nearly 15 years at the Marriott Marquis San Diego Marina — eight of them as executive chef — where he built a cooking philosophy around local farms and quality sourcing. Pam's background is equally broad: she has worked as a sommelier, general manager, and director of food and beverage, with stints at Nobu Las Vegas, Pamplemousse Grille in Del Mar, and Hello Betty Fish House, and she cooked a dinner at the James Beard House. The two formalized their partnership under APS Hospitality Group before launching Blank Slate.
That depth of experience is directly relevant to independent restaurant operators watching how chef-driven concepts scale in competitive coastal markets. The Schwartzes are applying a high-rotation, market-driven menu strategy — updating dishes frequently based on ingredient availability — that keeps regulars engaged without the overhead of a large brigade.
Seasonal Focus and Early Buzz
The format at Blank Slate centers on seasonal cooking, wine programming, and an intimate dining room that also accommodates private events and winemaker dinners. David Boylan, culinary columnist for The Coast News and longtime host of the food media platform Lick the Plate, visited earlier this year and described his dinner as "a perfect meal," going on to call Blank Slate "one of the best restaurants in Encinitas." He cited the frequency of menu changes and the team's combined culinary experience as differentiating factors in the local market.
That kind of early editorial validation — from a regional voice with a long track record covering the North County dining scene — can move the needle quickly for an independent concept competing against established names. Blank Slate's programming calendar also includes community nights and visiting culinary collaborations, a model increasingly common among independent fine-casual concepts looking to build loyalty and drive midweek covers.
Guests can view upcoming events and reserve at the restaurant's website or by calling 760-454-9991.
