A New Concept from a Milwaukee Institution Chef Paul Bartolotta is returning to the kitchen with High Stakes by Bartolotta, a European-inspired steakhouse opening Sept. 17, 2026, at 1030 N. Water St. in downtown Milwaukee. The restaurant represents the first major concept launch from The Bartolotta Restaurants group—which operates 18 locations across the region—in recent years and marks Bartolotta's most direct culinary involvement since his James Beard Award–winning career took him to Las Vegas and other markets. "High Stakes by Bartolotta represents a new chapter in the evolution of The Bartolotta Restaurants and it has afforded me the opportunity to return to the kitchen to work alongside Director of Culinary for The Bartolotta Restaurants Aaron Bickham, as well as Chef de Cuisine for High Stakes by Bartolotta Ian Jones, and the entire culinary support team to collaborate on this menu," Bartolotta said. "With High Stakes we are redefining Milwaukee's high standards once again. Every detail has been thoughtfully considered: from the ingredients we are sourcing, wagyu, caviar, and my personal favorite, langoustines, to an experience that feels distinctive, elevated, and cosmopolitan."
Menu Strategy: Premium Proteins and Sourcing The menu centers on a corn-fed Black Angus beef program supplemented by a separate premium "High Steaks" menu featuring USDA Prime, American Wagyu crossbreed, Australian, and Japanese Purebred Wagyu, along with aged grassfed and heritage selections. Signature dishes include a 7 oz. Filet Mignon topped with porcini mushroom–bone marrow and herb crust with Barolo wine sauce, and a 45-day Prime dry-aged bone-in ribeye. Caviar service—developed in partnership with Kaviari—marks another premium anchor. Bartolotta has maintained a relationship with the French caviar house since his Las Vegas tenure. Langoustines, described as "rare and unique crustaceans," sourced from a personal connection, anchor the raw bar alongside king crab from the Bering Sea.
Design and Hospitality Offering Designer Jay Franke of Jay Franke Design created interiors inspired by classic London lounges and private social clubs, drawing on Bartolotta's European and Las Vegas experiences. The dining room emphasizes drama through brass accents, antique mirrors, and polished finishes. Opening in tandem is Peacock Lounge, a pre- and post-dinner cocktail destination featuring Art Deco–inspired design with peacock-blue hues, high-gloss lacquer bar, and plush booths. The lounge menu includes gougères with Wagyu beef, Balik-smoked salmon, a Wagyu burger on pain feuilleté, and crab and shrimp toasts. Cocktail offerings include classic selections and house signatures like the Regal Bird, Olive You, Maria, and Bet on Red.
Hours and Reservations High Stakes by Bartolotta opens for dinner Tuesday through Thursday from 5 p.m. to 9 p.m., and Friday and Saturday from 5 p.m. to 10 p.m. Peacock Lounge extends service to midnight Tuesday–Thursday and 1 a.m. Friday–Saturday.
