Redesign Transforms Las Vegas Strip Icon America Restaurant and Bar at New York-New York Hotel & Casino has completed a full renovation, introducing a reimagined 10,000-square-foot dining room, expanded all-hours menu, and a dynamic projection experience built around the restaurant's sculptural U.S. map centerpiece. Architectural firm Zebra Global oversaw the design overhaul, moving away from the restaurant's traditional red, white and blue palette toward warm terracotta, deep walnut, and jewel-toned teal. The space features soaring ceilings with a dramatic faux skylight that echoes the original America Restaurant in New York City, checkerboard tile, warm wood flooring, and large-scale artwork in fiery reds and oranges throughout the dining room and bar. "Seeing the transformation fully realized, America feels more energetic and inviting from the moment someone walks through the door," said Keith Eure, senior vice president of Ark Las Vegas Restaurant Corp. "It is a fresh experience built for the way Las Vegas dines any time of day, from breakfast in the middle of the night to fun Sunday brunches and late-night dinners and drinks, whether you're visiting Las Vegas for work or play, or working on the Strip and seeking a spot to wind down after your shift."

Bar and Menu Expansion The newly expanded bar is anchored by a U-shaped counter wrapped in glowing teal tile and white stone, with emerald bar stools lined with brass accents. Archways framed by vibrant artwork rise above a wall of televisions, designed to accommodate sports viewing and game-day crowds. Executive Chef Brandon Flores has expanded the menu with new selections available 24 hours daily. Breakfast additions include a one-pound family-size doughnut for sharing and peanut butter and jelly pancakes with peanut butter sauce and strawberry preserves, alongside the existing "3-Pounder" giant pancake. Later-day additions feature a cauliflower steak with tomato confit, radish and crispy shallots, and wood-fired flatbread topped with prosciutto and arugula. Late-night offerings include a barbecue bacon Western burger with pulled pork, onion rings, smoked bacon and cheddar, plus lighter options like a super berry acai bowl with granola, fresh berries, banana, chia seeds and honey. Desserts and cocktails feature a churro milkshake with cinnamon-sugar custard, caramel and whipped cream, and tableside banana split service. The cocktail lineup includes the Fruity Booty (Appleton rum, Grand Marnier, Luxardo and pineapple), the Cadillac Sunrise (Fletcha Azul, Grand Marnier, raspberry, citrus and cranberry), and specialty drinks like the Strawberry Shortcake Loop served in a donut-shaped glass topped with cotton candy and the Banana Foster Flip with Appleton Estate rum, banana, brown sugar spice and egg white.

History and Operations America opened in 1997, the same year New York-New York debuted, drawing inspiration from the original America Restaurant in New York City, established in 1984 and closed in 2005. The Las Vegas location operates 24 hours daily and serves as a gathering place for locals, hospitality professionals and visitors. The restaurant is located at 3790 S. Las Vegas Blvd., steps from T-Mobile Arena. Reservations are available through OpenTable.

Why It Matters

The redesign signals Ark Restaurants' investment in the Las Vegas market as travel and entertainment spending rebound. A refreshed, expanded menu and enhanced design position America to capture both the high-volume late-night hospitality worker market and convention/tourism traffic, while the 24-hour service model sustains competitive advantage in a market where dining patterns are unpredictable.
