Spanish Hospitality Meets Modern Cocktail Craft Amada, Chef Jose Garces' flagship Spanish tapas restaurant in Philadelphia, has unveiled a reimagined beverage program centered on interactive presentations, house-made ingredients, and expanded alcohol-free options. The new menu debuts at Amada's Philadelphia and Radnor locations, featuring cocktails paired with refined glassware, enhanced garnishes, and tableside presentations. Signature drinks include El Avión (a take on the Paper Plane with Manchego garnish), Tónica Amada (a gin tonic finished tableside with fresh citrus and seasonal botanicals), Vermuteo (inspired by Spain's vermouth culture), and Banana Carajillo (the restaurant's interpretation of the classic Spanish coffee cocktail). For larger parties, the Queimada—a flaming punch prepared tableside—requires 24 hours advance notice. "In Spain, meals are meant to be shared," said Jose Garces, chef and founder of Amada. "That spirit of Spanish hospitality has shaped Amada since we first opened our doors, and this beverage program is a natural extension of that vision. We wanted every drink to reflect the same level of care and intention that guests have come to expect from our kitchen."

Zero-Proof and Happy Hour Updates The program expands house-made sangrias, Spanish-style Gintonicas, and traditional vermouth selections—cornerstones of Spain's bar culture. New zero-proof options include La Sin-Gría, a spirit-free take on the restaurant's signature sangria. Amada's updated happy hour runs Sunday through Friday from 4:30 to 6:30 p.m., offering the new cocktail lineup alongside wine, beer, and select tapas. Friday availability has been expanded to provide additional gathering opportunities. "Every cocktail on this menu was crafted to complement the food while bringing its own personality to the table," said Shannon Hall, vice president of beverage and innovation for SPB Hospitality. "We wanted it to stand alongside the food, not simply accompany it. Guests should leave talking about what's in their glass just as much as what's on their plate."

Why It Matters

For operators, Amada's approach demonstrates how experiential beverage programs—tableside presentations, interactive elements, and customization—can enhance guest engagement and differentiate a restaurant's bar offering. The emphasis on zero-proof options reflects shifting consumer demand while honoring cultural authenticity, a balance increasingly important for premium dining venues.
