Award-Winning Stadium Expands Concessions Lineup Allegiant Stadium is rolling out a refreshed food and beverage menu for the 2026 Las Vegas Raiders season, featuring new items developed by Silver & Black Hospitality, the venue's culinary provider. The announcement follows the stadium's recognition as the AFC's Best NFL Stadium Food in the 2026 USA TODAY 10Best Readers' Choice Awards, where it placed second overall.
New Standard Concession Items Standout additions to the concessions lineup include a Fry Bread Pot Roast Taco (fried dough, pot roast, queso fresco, and salsa verde), Street Dog Torta (Sabrett's, pork belly, refried beans, and avocado aioli), Focaccia and Lox Sandwich (dill cream cheese, lox, capers, and cucumber), and a Chile Relleno Burger. Other offerings include Really Big Chicken & Waffles and Buffalo Chicken Wontons.
Specialty Hot Dog Program Silver & Black is introducing a rotating lineup of specialty dogs that will vary by opponent: The Cuban (Sabrett's with pork belly, deli mustard, pickle, and cheese fondue), Elote Dog (Mexican street corn, cotija cheese, cilantro, and tajin), and Cali Dog (bacon, peppers, onions, and serrano).
Premium Tier Expansion The stadium is also elevating its premium offerings with new items including a Chilled Tierra Y Mar Board (guajillo-crusted beef tenderloin and molcajete shrimp ceviche), Las Vegas Flatbread (lemon ricotta, lobster, black truffle tenderloin), Japanese Milk Bread Lobster Rolls, and a Branded Prime Beef Tomahawk Steak with Cabernet Sauvignon demi and herb compound butter. A new Caviar Ice Service featuring Tsar Nicoulai Golden Osetra caviar is available as an upgrade.
Enhanced Dessert and Beverage Selection Dessert options expanded to include Stadium Cake, Dubai Cookie Cone, Blood Orange Panna Cotta, and a Build-Your-Own Crepe Bar. Specialty cocktails feature Spicy Margaritas with Bandero Tequila (a new vendor), Lady Luck Margarita, Strawberry Mint Mule, Endzone Mojito, and a Mocktail option.
Vendor Partnerships Returning and new vendor partners include Antidote (Las Vegas-based Hawaiian), Bandero Tequila, Blvd BBQ, Frito-Lay, Fuku Chicken (Chef David Chang), Hibachi Done Wright, Pizza Rock and Slice House (Tony Gemignani), Taco Bell, Tu Michoacana, Vito's Tacos, Border Grill and BBQ Mexicana (Mary Sue Milliken and Susan Feniger), Sun Cruiser, and Taqueria Ktrina—founded by two Latina sisters during the COVID-19 pandemic.
Operational Enhancements Fans can access Grab-and-Go Markets and use Mobile Wallet at all stationary concession locations to speed up service. Silver & Black Hospitality is also prioritizing sustainability with food waste reduction processes and improved energy efficiency in food and beverage operations.
Why It Matters
For stadium operators and hospitality directors, this menu refresh demonstrates how venues can balance innovation with operational efficiency—pairing high-volume items (specialty dogs, grab-and-go options) with premium tiers that drive per-cap spending. The emphasis on local partnerships also reflects a growing industry shift toward authentic regional representation, which enhances brand differentiation in a competitive venue market.
