All-inclusive resorts are moving beyond predictable buffets and standardized international fare, introducing dining concepts designed to anchor a vacation on their own merit. Three Hyatt properties in Mexico are exemplifying this shift with distinct culinary strategies:
Hyatt Zilara Cancun: Hands-On Yucatecan Cooking Following a $75 million renovation completed earlier this year, Hyatt Zilara Cancun has introduced Casa Adelita, where guests participate in Yucatecan cooking classes. "Guests can step into Adelita's kitchen, grab a beer from the fridge and roll up their sleeves for hands-on Yucatecan cooking, from making handmade tortillas to exploring traditional recipes, paired with artisanal tequila and mezcal that showcase the flavors of the region." The resort also debuted Bokeh, a 23-seat hidden speakeasy accessible through an unmarked door. The curated 90-minute experience emphasizes "low lighting, live music and craft cocktails — including dramatic, smoky serves — create the feeling of stumbling upon one of Cancun's best-kept secrets."
Hyatt Ziva Los Cabos: Theatrical Indian Dining Mahika, the resort's Indian restaurant, uses immersive design to transport guests. Diners enter through a ticket booth and pass a jewel-adorned elephant before reaching the dining room. The concept is led by an Indian chef whose background brings authentic regional perspectives to the menu.
Hyatt Vivid Playa del Carmen: Personalized Mixology La Mejorada reimagines the bar experience by abandoning conventional drinks lists. Instead, mixologists create cocktails personalized to each guest's preferences, using Mexican ingredients and regional flavors as the foundation for discovery.
Why It Matters
As operators compete for high-value guests willing to spend extended time at resorts, differentiating the dining experience has become central to positioning. These concepts—participatory cooking, theatrical settings, and personalized beverage programs—shift the value proposition from all-you-can-eat volume to curated, memorable experiences that justify premium pricing and encourage longer stays.
